Baked Apple & Paleo Granola Snack or Breakfast

Easy to make baked apple and paleo granola. Batch-bake the granola and apples for a grab and go solution to snacking or breakfast. Apples have beneficial properties for the Microbiome. Pectin, a soluble gelatinous fiber, can seal the holes in a leaky gut. Pectin binds to cholesterol in the gastrointestinal tract and slows glucose absorption by trapping carbohydrates. I like my apples warm right out of the oven, but have eaten them cold too.

Paleo Granola

I like to pre-soak and roast lightly my nuts and store them in the freezer for later use. In this recipe, the walnuts were the only nuts pre-soaked.
Ingredients:
Pecans whole, 12 oz., (3 cups)
Walnuts, 3 oz. (1cup)
Sunflower seeds, raw 2.8 oz., (1/2 cup)
Coconut shredded, 1.5 oz., (1/2 cup)
Dates pre-soaked in hot water and drained, (1/2 cup), diced
Egg, 1, Large, whisked
Celtic salt, 1/2 tsp.
Ceylon cinnamon 1/2 tsp.
Vanilla extract pure, 1 tbsp.
Yacón* root syrup, 1 tbsp. (2 if you want sweeter). Paleo, Keto friendly,I use this product.
Method
In a medium bowl, place all the dry ingredients and yacón syrup. Mix ingredients until well blended. Next whipped 2 whole large eggs until foamy about 1.5 minutes and add to the mixture all at once. Toss all the ingredients together until fully incorporated. Please note: you need to stir the granola around at least 2-3 times during the baking to ensure the granola is evenly toasted
Bake in a preheated oven at 325F for 20-25 minutes until golden brown or lightly roasted. Cool granola in the tray over a cooling rack. Once cool, store in a glass jar. Self life about 7 days.
Baked Apples
I like to bake these apples in bundles of 6 and then I use them throughout the week for snack, a dessert by themselves, or with granola.
Ingredients:
Apples 4, any variety, I like Gala, Pink Lady, Jonathan or Empire apples
Cinnamon Ceylon, 1 tsp.
Water filtered, 2 tbsp.
Method: Wash and cut the bottom of the apples and remove the top of the core of the apple leaving a well in the center of each apple. In a small baking dish place 3 tablespoons of water. Place the apples on top of the water in the baking dish and put one teaspoon of water in the well of each apple and sprinkle a generous amount of Ceylon cinnamon. Bake in a preheated oven for about 20 minutes or until soft. When the apples cook to a soft or almost apple sauce texture they release pectin. This pectin feeds the friendly bacteria in the colon and has the ability to heal a leaky gut. The pectin texture is like a light gel. Serve warm for breakfast or as a snack.
Optional: serve with almond yogurt and homemade granola for another delicious breakfast idea.
Yacón root is a species of perennial daisy traditionally grown in the northern and central Andes from Colombia to northern Argentina, sweet-tasting, tuberous roots. Yacón root is a prebiotic fiber which is food for the healthy bacteria in your colon.
