Yacón Syrup a Natural Table Sugar Substitute

Yacón is a tuberous root. The Yacón root is rich in prebiotic fiber fructo-oligosaccharides and inulin, and it can be used as a sweetener. There are some commercial brands that are produced it in the United States that will not raise blood glucose. Yacón root is a prebiotic fiber that is food for the healthy bacteria in your colon. Yacón syrup can be used to replace honey, maple syrup, or molasses due to the syrup consistency being similar. Yacón is low glycemic index.

The brand that I like is Alovitox as it has a clean label listing one ingredient and is certified organic too. You can buy it in Amazon or their website.

Disclaimer: I am not an affiliate of this company and I was not paid to test my bake products with this prebiotic syrup or paid to mention them in my artisan baking book. I just like the product for many reasons such as that is a prebiotic fiber which means is food for the bacteria in the colon) and it will not raise blood glucose (very low glycemic,1).
