Yacón Syrup a Natural Table Sugar Substitute
Yacón is a tuberous root. The Yacón root is rich in prebiotic fiber fructo-oligosaccharides and inulin, and it can be used as a sweetener. There are some commercial brands that are produced it in the United States that will not raise blood glucose. Yacón root is a prebiotic fiber that is food for the healthy bacteria in your colon. Yacón syrup can be used to replace honey, maple syrup, or molasses due to the syrup consistency being similar. Yacón is low glycemic index.
